Most of The premium Japanese teas we sell are young leave sencha from the first annual tea harvest (there are 4) when the leaves are young, soft and flavorful. |
IMPORTANT: Some of our premium teas are now sold in quantities of 2 oz. to make them more affordable. 2 oz. (60g) of loose tea makes approximately 15 cups; 3.5 oz. (100g) makes 25 cups. However, premium tea can be infused 2-3 times, so each 2 oz. (60g) portion actually makes 30-45 cups and each 3.5 oz. (100g) portion actually makes 50-75 cups.

An early-April, first crop sencha harvested from the uplands of Japan. The growing climate produces a deep rich aroma and taste and a bright green tea color. The first crop of the four annual harvests is considered best when tea leaves are younger and softer. Click here for an organic version of sencha tea.
Hot Tea: Infuse the leaves (2 tsp per cup) for 40 seconds in a pot with water that is about 176F/80C to draw out the subtle, rich flavors of this quality sencha. Fine tea can be infused 2-3 times using higher temperatures and shorter infusions each time. Iced Tea: Pour 1 1/4 cups of boiled water over 5 teaspoons of tea and steep for 3-5 minutes. Pour into pitcher while straining leaves, add ice and top up with cold water to make a quart of iced tea. Garnish and sweeten to taste. |

A subtle green tea sencha with a rich taste. Young buds are shaded in the manner that Gyokuro is processed to increase the tea's amino acid and theanine content which gives it a sweeter taste. During processing it is extra steamed (hukamushi-cha) to produce a more fragrant full-bodied taste. It is also pan-fired at the end process to produce a richer, less 'green' aroma. Made from tencha (pure dried) gyokuro leaves from Uji, Kyoto, this matcha is considered one of the finest green teas with a bright green color and smooth taste. You can spoon this powder directly into a cup with hot water to disolve the powder. This Matcha consists of stone ground leaves so it contains, by volume, higher concentrations of catechins and vitamins.
Hot Tea: Add 2/3 of a teaspoon of matcha powder to a cup of hot water and whisk to a froth. Matcha is an an excellent choice if using green tea for cooking and baking. Also makes an incredible green tea ice cream. |

Matcha (powdered) green tea is used in the Japanese tea ceremony. It is enjoying popularity because of its rich, intense flavor and high concentration of antioxidants and vitamins. This matcha has a jammy-like smoothness with a very satisfying full cup taste. Its Gyokura leaf base gives a light astringent finish. Mass Market teas typically have a 5-6% antioxidant level. This tea has a very high antioxidant level of 10%
Hot Tea To prepare you can directly add 2/3 of a teaspoon of matcha powder directly to a cup of hot water and whisk to a froth. Similar to espresso, matcha is best when drunk quickly right after it is made. Matcha is an an excellent choice if using green tea for cooking and baking. Japan's best green tea made from single buds picked only in April/May. To increase chlorophyll (and dark green color) and reduce tannin (for a sweeter flavor with no bitterness), Gyokuro is shaded for 3 weeks in early spring. The leaves are small and extremely fragrant and tender. It's a full flavored tea with a satisfying light, refreshing character and a pleasantly vegetative flavor with some briskness and a very bright infusion. Gyokuro has been referred to as 'history, philosophy and art in a single cup.' This is the best green tea of Japan. Mass Market teas typically have a 5-6% antioxidant level. Hot Tea: This tea is best enjoyed by pouring water that is about 178F/80C over the leaves (5 teaspoons in a 3 cup teapot) and infusing 40seconds. Can be infused repeatedly 3 times. For repeated infusions use water of about 135F-165F for the second infusion and 150F-180F for the third infusion. |
